There are two types of kayaks to pick from.
Here is a list of manufacturers.
Ocean Kayak  < I bought the Caper model and love it.
Emotions  < My wife bought the Charger model and she loves it.

There is the sit-on-top type and the sit inside type.
Each has advantages and disadvantages depending on what you will be doing.

Some basics that I can tell you is the sit on tops are self bailing.
So if you flip it over or water gets inside the wells it goes right out the bottom.
The sit-on-top kayaks are made of plastic and are like big floats in the water.
I don't think you could sink one if you had to.
The sit inside type can collect water inside and you'll have to bail the water out.

The wider the boat the more stable it is.
The longer the boat the faster it goes through the water.
A shorter kayak turns fast and easier than a long kayak.
A shorter kayak goes slower in the water.
